If you do this in production code, there is a very good chance that such activity - requiring as it does changes to an EXE or DLL file - will be regarded as "probable virus activity" and your application will be tagged as "probably malicious".
Certainly, if a new app on my system started doing that, by anti-virus would block it and warn me - and the app would be returned for a refund as fast as possible.

There is no good reason I can see for needing to modify an assembly version after it has been built.
