I'm looking for guidance on how to include unit tests in Azure Sphere Visual Studio solutions. As far as I have seen, the sample codes don't include unit tests.

I haven’t found any sample codes. I suggest you, provide your feedback on the UserVoice forum and upvote for this feature.

All the feedback you share in these forums will be monitored and reviewed by the Microsoft engineering teams responsible for building Azure.
