In sharepoint, having multiple users editing at the sametime in exel is often a mess for us.

Is there a way to choose in sharepoint that some excel document can be open for editing only 1 person at a time so that other people are in read only untill I have finish my work just as same old way when we were on servers ?

Enable Check In/Out on the Document Library. This will enable exclusive locks for all files in that Doc Lib.
