I want to use the Copy feature retrieve attachments from a list in our SPO site.

Please take a look at the following document: Copy Activity in Azure Data Factory - See the Generic Protocol where OData is supported. So, minus the AAD requirement the functionality is supported per the doc. ADFv2 AAD auth is supported with service principle (see below).
