I am running on-premise Exchange and Dirsync with O365. I have user mailboxes in O365 and on-premieses.

User mailboxes on-premises are known as MailUser in the cloud when synced, so I have a mailbox on prem that is synced to the cloud, when I try to remove a X500 from the on-premise mailbox it keeps coming back, how do I remove this x500 address from the on premise mailbox or from the MailUser in the cloud?

The reason its syncing is so that users can see the Mailbox\MailUser in the GAL when they want to send emails to it etc.

There are some attributes which are written back by the Exchange online system to the on-premise through Azure AD connect . You mentioned Dirsync but I think you meant AAD connect as dirsync is deprecated. The X500 attributes might be coming through writeback of proxyaddresses attribute. Could you please share your use case or reason as to why you would like to remove the X500 values as explained in the question. It may help us understand your issue in a better manner . Ideally in a hybrid scenario , there are two GALs (one for on-prem exchange and another for exchange online) and depending upon where the user is both can be queries for finding a mailbox/user within the exchange system.

Also X500 address is equivalent to the value of legacyExchangeDN attribute for the User object in AD and used by Exchange system to deliver mails internally.  Hence its generally available on the objects however if you could let us know your use case as to why you would like to remove it, we may be able to help better. As per my research , if you remove it , it may break the mail delivery sometimes. So I would suggest to test it on a user by removing it and waiting for the Offline address book to get updated , and send mails to the test user's ID to check if you get any failure.
