As far as i know, Adfruit has released a kit for IoT Core: 

1. Microsoft Hackster.io Virtual IoT Pack: https://www.adafruit.com/product/3604

2. Microsoft IoT Pack for Raspberry Pi 3: https://www.adafruit.com/windows10iotpi2

You can get some sensors in the kit and play with them according to the official docs here:
