Hi,

first of all you have to create a CentOS base vhd. Have a look at the following blog post by Ben Gelens on how do you do that.

After that you can create your ARM template. There for you need the Publisher, Offer and Sku properties from the last steps in the linked blog post.

To have an easy start with a Linux template have also a look at the Github Azure Quick Start Templates.
