I have an existing profile definition that was badly designed (for the database) I am replacing the underlying table with more than one table but I would like to do this without changing the actual field definitions.  Is there a way I can point the Profile system to a view to retrieve the profile object and intercept the update and insert to distribute the data correctly?

no way to do it on the profile system... if you have 2 tables, you need to make 2 profile definitions.
