My team want Functional Requirements to show up differently to other requirement types on the backlog. i.e. Everything remains featured under Epics (Orange) and Features (Purple), But then the nested backlog item could be a function or some sort of todo. The todo items (i.e. refactor the code for this page) would remain blue as default, but the function (i.e. Delete an Address) would show as green.

I realize I can simply create a new work item type, but in this case, it'd have all the same fields as a requirement, and the requirement type would dictate how it displays

You could add a customized work item type like requirement, you could create your customized field, and set the color of this new WIT.

You need to add <WorkItemColor> element for your customized WIT in ProcessConfiguration.xml.
