As a disclaimer, I have no formal background in programming, computer engineering, computer science. I have started exploring purely out of a necessity to carry out some tasks, but have been attracted to dive deeper.

I have an app from my PC that I converted to UWP using the guide at https://docs.microsoft.com/en-us/windows/uwp/porting/desktop-to-uwp-run-desktop-app-converter, but have realised it's in x86 architecture and not ARM that is required by Raspberry Pi 3 when trying to load it through the IOT Dashboard.

The "Desktop Bridge" only support the desktop.  You will need to create an IOT Core application and port your code to UWP for it to run on Windows 10 IoT Core as it does not support the full desktop version of the OS.
