i enabled the "Enable downloadable packages" option for our app in the windows store, so that OEM can include our app into their image. I'm able then to donwload the generated zip file and when looking inside i can find an .appxbundle file that allows me to install the app wihout being connected to the store.

This could be a valid approach as customer just need to download the zip file from the link without accessing Store. The package is well signed since it's certified from Dev Center. But it still need to connect to Store to receive app update.

Thus, you could generate a new zip file link when you update your app. The app will not lose app data since you don't need to uninstall the old version, just making sure the new package has a higher version number and the same identity info.
