I would like to know if this version requires an internet connection for activation. If yes, does it require it once at the activation, or on a regular basis?

Welcome to the MSDN forum.

If you have a VS 2017 professional product key, you can activate it without the internet connection. After that, it should will not requires you activate it again.

If your Microsoft account associated with a valid vs subscription, please access https://my.visualstudio.com/ProductKeys and sign in with your Microsoft account, then you can find the valid product key and use it to activate VS professional without the internet network.
