Our project Server environment uses custom content types for each list in the project site including Issues / Risks etc. Over time there have become some redundant columns columns not used by any content types in my site lists.

The easiest way would be to provision a Microsoft Project Site, and then check to see what columns are in the default lists. The default content types are called Project Site Risk and Project Site Issue.
