Are there any samples out there on how to do the background removal in a Windows 8 store app?  There are samples for WPF, but they dont work in the Windows 8 store app.

There are no background removal API's for desktop or store for the v2 SDK. The sample is using CoordinateMapper

As for making a store application, you can achieve the similar result by following the pattern shown in the WPF code. You can take any of the color/depth/ir basics samples and modify it to use this code to get the Kinect data.
