We have a very simple Windows Phone 8.1 app which consists of a WebView. When I tried the app on Windows 10 Mobile I would have expected the Edge engine to used by the WebView but instead I see that IE11 is being used.

You will need to update your app to a UWP app to get the updated functionality. The general goal is for Windows (Phone) 8.1 apps to still act the same as they would on Windows (Phone) 8.1.
