If I'm taking some HD content and trying to save it so I can play it on the XBOX 360, can I use VC-1 Advanced?  I know it wasn't supported but the articles I read are pretty old on the subject.  Also is there a reason to use the Advanced profile, guessing it's 'WVC1' as opposed to using VC-1 Main?

VC-1 Advanced should work fine on the Xbox. Check out the following article for further details. Advanced does give you a couple of extra tweaks and higher bitrate limits etc. over Main.
