We create a custom view in Project Web Access 2007.  There are a couple of custom fields that we have and a description for those fields.

That is not possible! In the grouping bars, the "description" is shown in case it is specified in the enterprise custom field list.
If you don't like to see the "description", you should leave it blank: as such you will see the "value"...
