The new "Create team project" dialog selects GIT as default version control, we don't use GIT so this is very confusing to your users. How can I disable/remove the GIT source control feature in TFS2017 (or at least change the default selection back to TFVC)?

You can disable it (or at least break it) by removing the <git> section from the process template's versioncontrol.xml. To do so you will also have to update the Process Template GUID to a new unique GUID. You then likely want to delete the default processes, or at least guide your teams to use your custom process:
