In all browsers (even IE6) the drop menu <div> that surrounds the link grows to 100% of the space available. In IE7 & IE8 compatibility mode, it is only the width of the text of the link. It looks badly that way and I'm at a loss as what to do with it.

You have given class menuDropBox a min-width of 170px.  But the contained div class="subMenu" has no min-width specified.  IE7 shrinks it to only what is needed.  Give subMenu a min-width, and see what happens in IE7.
