I guess something like https://www.httrack.com would make the deal. Just be careful that will backup static site for a given user at a given time, the rest will be lost. So depending what the ultimate goal is but be super careful, that won't be a sharepoint backup, but might be useful if you need to browse it offline to develop a new version or something like that.
