We have large single SharePoint site collection with storage 120 GB.

As far as I know, you cannot control the duration of the deletion process executed by the Gradual Site Delete timer job but only its scheduling.
That timer job deletes the data in small enough batches of a maximum of 1000 rows through multiple transactions, but the amount of data to be deleted will be the key factor for the timer job's execution time: you'll have to manually force the execution of the timer job in order to have the database space released as soon as possible.
As an alternative, you can remove the site collection using the Remove-SPSite cmdlet without performing a gradual deletion; then you can completely release the space previously used by the deleted site collection first by executing the Get-SPDeletedSite cmdlet to get a list of the (partially) deleted and finally free the content database space by executing the Remove-SPDeletedSite cmdlet.
