 I was curious how everyone is handling workflow versioning for workflows developed with SharePoint designer.  In particular our group is looking to setup new workflows for user acceptance testing and then roll back if the new workflow is not accepted.

Can you provide more information about your requirement? Do you want the workflow continue to run until the users accept? If yes, you can use use loop function in the workflow. Workflows in the loop will run repeatedly until the condition is true.
