I want to add an extra option to the choice field in a sharepoint list which has 20000+ items.

The platform is SharePoint online.

When i try to add an extra option, it  doesn't allow me to do so throwing an treshold limit error.

do you use the same choice field for filtering list view? (since you have more than 20000 items in the list you should have some filtering on list view because treshold limit is set to 5000 items) If yes, try temporary use other field for filtering and try to add new choice there. If it will allow you do to it, after that change filtering for list view to original choice field.
