Usually the best resources are in the Application Insights documentation, the Application Insights SDK, and Azure Monitor/Log Analytics documentation.  For specific property values like those you've mentioned above, it can be difficult to track down detailed information about how they are collected.  I will let the document author know about this request (and we've had similar requests in the past).
