I am working on a new office 365 sharepoint project. and our customer have sent us a username/password. where i access the office 365 using this username , and i find that this user is defined as global admin, i confirm this from the following place:-

now i am planning to create 5 site collections. but before doing so i need to know which users will have full control on our site collections? i think the global admins can add themselves to be the site collection admins and can get full access to our site collections (this can not be prevented). but which users can also do this ??.. now inside the views list i find roles such as Password admins, Service admins, etc and those roles contain users:-

second question. Why inside the above views list there is no option to view who is the sharepoint admin as based on this link https://support.office.com/en-gb/article/Manage-administrators-for-a-site-collection-6a63e3be-9bd7-4652-b4f6-4575194d7599 there is a role named sharepoint online admin, and users who have this role can have full control on all the site collections... so why it is not listed in the above list ?

Only the global administrators and SharePoint Online administrators can designate site collection administrators, and only global administrators can access in the SharePoint site collections before granting permissions among the office 365 admin roles.
