While creating a tasklist I learned that in order to be able to filter the tasklist using metadata I have to check the option "server render" of the webpart.

By doing this I lose the possibility to work with subtasks.

Does anyone know how I can solve this problem and keep both the filter option and the possibility to create subtasks?

I have reproduced your issue. I cannot filter the items by the metadata column unless I enable Server Render or change the view style to another style besides Default style.

As a workaround, an idea is, we could use the JS Link to render the list view.
