I have an InfoPath form for a SharePoint List which includes a "Person or Group" field. Within the form, everything works as expected.  Within the form is a button which sends the form embedded in an email.  The email is perfect but for the fact the "Person or Group" fields appear blank.

Based on my testing, in the reading pane of the email, the Person or Group field was blank. If I double-click the email to open the email, the value of the Person or Group field was displaying.

So, double-click the email and open it then check the value of the Person or Group field.
