You need to use anonymous type for specifying multiple columns. This also works without specifying the indicies.

context.ClimbingGrades.AddOrUpdate(grade => new { grade.Name, grade.GradeType },
    new ClimbingGrade

        GradeType = ClimbingGradeType.FontainebleauBloc
    },
    new ClimbingGrade
    {

        Difficulty = 4.25,
