You can't.
There are good reasons for this: mostly to do with spammers trying to find "live" emails - and if you could do it, so could they. As a result, most email systems don't obey "return read receipt", or require the user's permission, and don't display images to prevent "track back" via the image URL.

You can't do it, so spammers can't do it! Sorry.
