hey guys, can you please elaborate the part from offical Azure KB about WAF throughputs of 6K > 13Mbps and 100K>100Mbps speed limits. What if the response size is bigger or smaller from the given 6K and 100K examples, how much would our throughput be in those cases?

As mentioned in the documentation https://docs.microsoft.com/en-us/azure/application-gateway/application-gateway-faq#performance
"These values are approximate values for an application gateway throughput. The actual throughput depends on various environment details, such as average page size, location of back-end instances, and processing time to serve a page. For exact performance numbers, you should run your own tests. These values are only provided for capacity planning guidance."
As throughput depends on lots of factors, you should run these test on your own before using Application gateways in Production environment.
