I have built a booking system to allow the company to manage their resources.

The system is available to all staff and can be accessed through the intranet. To book a resource you click on the calendar pertaining to that particular resource.

The problem I have is that if someone was to make a re-occuring booking the system accepts that booking regardless if someone had booked it before then. It creates a clash - and they can be nasty.

Yes you can. You can easily remove the default recurrence setting from New, Edit form pages by edit them in SharePoint Designer.
