As a large organisation with many thousands of employees, we have an on-prem instance of SharePoint 2010 and standard licenses.

Is there a simple way for authenticated users (employees) to share information with people external to the organisation, without having to make external people fully authenticated users?

In Dropbox i can send anybody a link to any piece of information and they can open it without the need for an account or authentication.  It's important that it's a link so they are looking at the most recent version.

You can achieve your purpose using SQL Server Provider based Claims based authentication:
1. Create the database using aspnet_regsql
2. Add users and roles using the Web Site Administration Tool
3. Add connection strings in the web.config
4. Add membership and role providers           
5. Edit web.config for Central Administration
6. Edit web.config for the Secure Token Service Application
7. Add the FBA administration user to Central Administration

If they need regular access and don't want to rely on being invited, you just need to grant them permission for you list/list item. Then they can use Form Based authentication to access your site.
