Hello, is there any way in which I can shut my VM down on the close of business Friday and start this back up o the Monday morning through Automated Accounts? The only options I'm seeing are the daily autostarts/shutdowns.

You can do this through an Automation runbook, creating two OneTime schedules. One schedule to PowerOff, another to PowerOn.
