I want to archive sharepoint documents / list items which are not modified from past one month by users to other location (other SP environment).Please suggest what are the steps .Also I want to send out a reminder mail to users before archiving documents .

You can create workflow which can move the items from Main List to archive list.Here are the steps to create a workflow for archiving purpose.

Or You can think about writing a custom timer job which will move the items from main list to archive list.
