We would like to convert Azure VM from unmanaged to Managed Disk. 

Referring to https://azure.microsoft.com/hu-hu/blog/managed-disks-migration-portal/

To convert the disk via Azure Portal using the 'Migrate to Managed disk' feature, If the VM is part of an Availability Set, the Availability set will also be auto migrated?

Why the need to migrate the Availability Set as there is no disk attached to it? 

and Does that mean all VMs within the Availability Set need to have Disks converted to Managed Disks. or we can convert only ONE of the VM within the Availability Set?

An Availability Set is a logical grouping capability that you can use in Azure to ensure that the VM resources you place within it are isolated from each other when they are deployed within an Azure datacenter

So when you migrate disks, this must be to a different physical location within the Azure DC, therefore the availability set also needs to be moved to accommodate this.
