I have set permissions in the list as below.

But as an exception; I need to share some of the items created by me for the user to edit. How can I achieve this?

You can't with that setting.  That setting bypasses the regular permissioning system and limits what a user can see based on the Created By Field.  So the only way to change who can see it would be to change the Created By field and then you wouldn't be able to see it or manage it.  There is no way to create an exception.
