you can utilize Kinect Studio. This is a useful tool for testing our Kinect enabled application.
With the simple interface of Kinect Studio you can record and playback RGB and depth streams from a Kinect sensor.

This is the simplest way to Record all the data coming into an application from a Kinect sensor,
eventually physically disconnect the sensor (be totally offline) and then Injecting the recorded data in your application each times you desire.
