I have a multi stage workflow and in first stage I have a PDP that collects a request intake ticket with several custom fields and Project Owner, Project Name and Start date.  When I move to the next Stage I redisplay the ticket info collected in stage 1 in its own webpart and can make all my custom fields read only but the Project Owner, Project Name and Start Date are not available in the workflow stage to make them read only.  Is there a way to lock these fields down as read only?

In short No, only "Workflow Controlled" fields can be locked down by stage. However a workaround I have used for some fields is to create a formula field which equals the field in question, eg "My Project Name" = [Name].
