What are SERVERDB2UDB07 and SERVERDB2UDB01 - DB2 Instance Names or DB2
Databases inside some instance or are they physical servers?
AFAIK, you cannot rename a database, but you can do a redirected
restore to achieve a near similar effect, however you need to have set
separate paths for all your tablespaces.
Instance Rename is not possible.

Now back to your question. Although you cannot change the name of a DB
once created, you can use the ALIAS for a DB. So you can test DB X then
when you are ready, have your clients call it Y (Y being the name of the
present production server).
Once your testing on X is complete, you can then reattach all your
clients to use an ALIAS for the new server (which will the the same DB
name as the old server)
