When creating for example new AKS cluster, it is assigned to the default log analytics workspace if I don't specify something else explicitly.

When creating from portal, you have select the log analytics workspace explicitly. However, if you are using ARM templates to deploy AKS cluster then you can set the property "defaultValue" for the log analytics name parameter.
