A lot of people are uploading  into our SharePoint

Allow users to upload multiple files into sharepoint online and when they do so ask or pop a window to ask them about adding  specific metadata.

OOTB this is not possible. This is a serious drawback for organisations that do not want to use SharePoint as a web-based file share.

3rd party solutions have been developed to address this. These solutions allow uploading of folders/files plus adding metadata. In addition they typically provide additional functionality like parallel uploads, extraction of document properties (e.g. keywords from PDF files), logging, flattening folder structures, filtering, ...
There are several vendors in this space. The company I am affiliated with is just one of them. Some tools are targetted at power users or migration teams but there are also tools aimed at users by providing browser-based solutions.
