I am using SharePoint Server 2010 though IE 11 on Windows 10. I use a SharePoint List in Datasheet view with several multiple choice checkbox fields. Issue is that after selecting options in the multiple choice dropdown menu other options are automatically selected the next time the dropdown menu is opened without user input as shown below.
One Column I use to mark codes needed to review with a multiple choice field.
Using the dropdown I select the codes needed, in this example 100CE and 106.
After clicking OK the codes display in the field correctly.
This is where the problem shows up, if I reopen the dropdown to make changes I find that other codes have been automatically selected. Because I selected 100CE initially both 100C and 100 show up checked.
From my experiments with this error I have been able to determine the following.
-Only shows up in Datasheet view, inline edit and popup edit do not cause this error but with several multiple select fields with dozens of options each those views are not viable for regular use.
-At least 2 options need to be selected, just picking 100CE in my above example would not have automatically selected any other options but as soon as 106 was also selected the error reoccurred.
-The options automatically selected are always partial components of the manual selected option. For example, in a list of a, ab, abc, and abcd if the option abc was manually selected then a and ab would be the automatically selected options but not abcd.
-Occurs with alphanumeric options, pure numeric, and pure alphabet options.
-Adding characters such as a space, period, or comma before or after the final character(s) does not change the error. In the case of my example this means using 100.CE instead of 100CE. Putting an extra character at the beginning of the option (for example
.100CE) does mean other options not using the same character will not get selected but this is not a viable solution as the list needs to display in groups based on "Starts With" filters.
-Error occurs for all users with edit permissions at all computers.
-Can not access Datasheet view on Edge, Chrome, or Firefox to test on those browsers.

I managed to reproduce your issue, and I can reproduce your issue in Windows 10. Per my research, there is no clear fix for this issue. I recommend you to go to user voice for SharePoint to post this issue. Here is the link: https://sharepoint.uservoice.com/forums/329214-sites-and-collaboration
And for browser, the Datasheet view for now only works for IE 11 of 32 bit version in compatibility view or older versions.
