I'm trying to setup Power BI embedded environment using my Azure demo account. However, the API permissions won't appear in the list. If I type nothing comes up.

Could you please confirm if you are able to see both the APIs "PowerBI" and "Windows Azure active Directory" in the list ? If you are able to see both , then you should be able to see the permissions. If you are unable to see the API itself then , I would recommend registering the PowerBI service using the Azure subscription blade. Please navigate to the Azure demo subscriptions blade on Azure portal and then search for Resource providers . Try searching for the API that you need . you should see something as below and you can register the resource provider on your subscription.

Once done try to check it again. You need to make sure that the subscription you are making this change has the default directory same as the one you have registered the PowerBI app .
