I have across few things like Bios serial number etc for Windows 7, Windows 10. But I see that those values are empty in Windows Embedded Standard 7. In customised Windows Embedded Standard 7, looks like, it is upto the manufacturer to provide a valid value for serial number etc.

In ICE there is the OEMInformation that can be put into the image. These values get stored in the registry. I think the WES7 license stickers have a bar code on them. You could have someone in manufacturing scan the barcode value into the OEMInformation->Model registry location. Or you could use a serial bar code that you create for your products.
