The simplest way is to publish directly to the localhost of the VHD that you've created.  These are the steps that are outlined in the "LightSwitch HTML Client Tutorial" guide under "C:\Content\" (pages 21-23).  Assuming your VHD is connected to the network, you should be able to hit it from a Win8 slate / iPad / another computer by going to http://<machine-name>/ContosoMoving/MobileClient, substituting "ContosoMoving" and "MobileClient" with the name of the project and HTML client that you created, if it's different.
