I would like to record all audio calls on Lync server 2013. I have sucessfully establish ApplicationEndpoint with Lync.

UCMA can only record calls it is a participant in.  If someone is making a P2P call to another user then UCMA will not be directly involved.

The only way you could do this would be to use a Lync Server SDK application to redirect all calls to the UCMA application, then Back-to-Back the call to a conference.  Then trigger the conference to make a dial-out to another B2B which goes to the original caller.  Then you can join an app endpoint to the conference to do recording.
