If I use any of the Windows Embedded version, do I need to have a Microsoft EULA for my end customer. I am selling a closed system (kiosk), where the user does not need to know that they are running windows.

You don't need to have EULA for your end customer. Just buy the right license. It tells everything. But if you necessary to fix the EULA content, you can find license.rtf in c:\windows\system32.

It's good method to fix the EULA content when deployment.
