When you create your Team Project, the process template that you choose will be the one that you have to live with. If you want to change from the CMMI to Agile process template, you have to create a new Team Project first.
Then you can backup all the wit definitions in your old project, and modify the wit definitions to suit the new project, as some work item types have different names and fields in CMMI and Agile.
After that, upload the modified wit definitions.
