All the catalog tables are in the SiteName_ProductCatalog database. I would not recommend manually editing these tables unless you feel really comfortable and you have a good backup. I am not aware of a document that defines for you what each table's purpose is, but you can figure  it out by just examining the structure of the table and the data within.
