I recognized that Lync client is pulling organization info (Department, mobile, title, etc) from exchange server (Correct me if I'm wrong). The information that the Lync client displays comes from a couple of places.

As far as I know, there is no way to change these behaviors.  You could write an application that publishes custom presence categories for users, but the standard Lync client UI would not display them.

You could also write a menu extension that would display any information that you want from any source but it would not show up the "Contact Card" for the users.
